Tomato Pie

Crust:
1 1/8 c. flour 
1/2 tsp. salt
1/4 c. milk
​1/4 c. olive oil
Mix flour & salt together; pour milk & oil into 1 cup; do NOT stir; they don't mix & that's OK.  Add all ingredients together at once; stir until mixed; shape into 2 flat-ish balls.  Wrap balls in plastic wrap.  Refrigerate for 15-30 minutes.  Remove from fridge & roll out in between 2 sheets of plastic wrap.  Place into pie pans.  Poke holes in dough with fork.  Bake for 20 minutes at 350 degrees.  Cool.
Filling:  
2-3 ripe tomatoes, peeled & sliced
Fresh Basil & Oregano, chopped
1/4 tsp. garlic powder
1 Vidalia onion, chopped
1/2 c. mayonnaise
1 c. mozzarella cheese, shredded
Preheat oven to 350 degrees.  Place tomato slices in cooled crust overlapping as needed, sprinkle onion over tomatoes.  In separate bowls, mix cheese, garlic powder, mayonnaise and fresh herbs.  Spread over tomato & onion.  Bake for 30 minutes.


Caprese Pasta Salad

Ingredients:
Grape or Cherry Tomatoes
Fresh Basil Chopped
Cooked Pasta (shells, bowties, etc.)
Fresh Mozzarella, cubed
Vinaigrette Dressing (listed below)

Combine all ingredients in a large bowl.  Toss with dressing and serve.  Additional ingredients, such as grilled chicken may be added.

Dressing:
Olive Oil, balsamic vinegar, lemon juice, Italian seasoning, salt & Pepper

Rosemary Garlic ​Butter

1/2 c. butter, softened
2 garlic cloves, minced
2 tbsp fresh rosemary, minced
1 tbsp lemon juice
1/2 tsp salt
1/4 black pepper

Combine all ingredients and mix well.  Chill.  Delicious on bread, potatoes or grilled steak.

Savory Chicken Squares

3 oz. cream cheese, softened
1 tbsp fresh chives
2 c. chicken, cooled & cubed
2 tbsp milk
1/4 tsp salt
1 tbsp pimento, chopped
dash of pepper
8 oz. crescent rolls

Mix all ingredients except crescent rolls.  Place 2 rolls together to make a square.  Press seams together.  Spoon 1/2 c. of chicken mixture onto crescent roll.  Fold up corners of rolls to middle, seal.  Bruch tops with 2 tbsp. melted butter & sprinkle with crushed croutons.  Preheat oven to 350 degrees.  Bake on ungreased cookie sheet for 20 minutes or until golden brown.
